Preparation:
  1. Cook the rice noodles for 2 minutes in boiling water, remove from the cooker and drain.
  2. Cut avocado, carrots, ginger, and peppers into thin strips.
  3. Soak the rice paper in lukewarm water for 30 seconds to soften it slightly.
  4. Place a mixture of the cut vegetables and rice noodles on each paper.
  5. Then roll and store the rolls.
  6. Serve with soy sauce.
